Harvesting and vinification:

Hand-picking, cold maceration for 16 hours, soft pressing, clarification and yeast inoculation,
fermentation at controlled temperature for 10 days. The end of fermentation takes place in bottle for a natural sparkling. All procedures are carried out in a completely oxygen-free atmosphere to protect the integrity of the wine.
The only adjuvants used in these processes are CO2 and nitrogen. Wine without added sulphites

 

Aging:

For 3 months in bottle on lees


Alcohol by vol. 12 - 12,5%
