Harvesting and vinification:The Hand-picked and selected grapes undergo a soft pressing process. Fermentation of Sauvignon
blanc and Trebbiano takes place in stainless steel at controlled temperature for about 10 days.
Fermentation of Chardonnay takes place in Tonneaux of french oak. All procedures are carried out in a completely oxygen-free atmosphere to protect the integrity of the wine. The only adjuvants used in these processes are CO2 and nitrogen.
Aging:
For 6 months in French tonneaux on fine lees and after aging for 6 months in steel. The wine aging 6 months in bottle before being released onto the market.
Alcohol by vol. 13 - 13,5%
