Enhanced by time, complex and fascinating, the Pas Dosé Cuvée Vintage Riserva 180 months tells all about the careful selection of its grapes, the soft extraction of the must from which it derives and its precious fifteen years of aging on the yeasts. A very long pause that softens the pressure up to 4.5 atmospheres and which gives it a very fine, soft and delicate perlage on the palate.
The intense golden color, with its greenish reflections, is a prelude to the powerful olfactory experience that begins warm and enveloping to arrive at a persistent finish, which evokes on the palate ancient flavors of the cellar, inheritance of its long stay on the lees. In fact, it starts with aromas of amber, honey, white truffle, bergamot and candied orange peel to move on to pastry scents such as amaretto liqueur, cocoa, puff pastry, hot butter, caramelized sugar, toffee. An aromatic symphony that ends in freshness, with licorice root and peaches in syrup.
Vintage Pas Dosè Gran Riserva is a meditation Franciacorta, a sensual and enveloping experience for the palate, which expresses the natural softness of maturity, blending the creaminess of Chardonnay and the power of Pinot Noir. The complexity, softness and intensity of this wine satisfies the most difficult spirits even without accompanying food. On occasion, it can best enhance the tastiest dishes.

REFINEMENT
Up to fifteen long years of sacrifice give this cuvée a very complex and evolved structure. Depending on the vintage, a variable percentage is aged in small and fine French oak barrels. After that, we carry out the natural secondary fermentation in bottle and then the élevage on the lees for a period of 180 months. A bottle that does not exceed 4-4.5 atmospheres, for true connoisseurs.
