wine that carries with it the flavor of the last century: the almost 25
years spent in the cellar in the company of the yeasts make it
an important and rare sensory experience. History
merges with the sweetness of memories in this
evolved and mature Franciacorta. Its exhilarating aroma speaks of coffee,
honey and white truffle, aromas of amber, bergamot and
candied orange peel.
Aromas that are embellished by the scents of pastry
such as amaretto liqueur, cocoa, puff pastry, warm butter,
caramelized sugar, toffee.
In the mouth the bubble is a caress, in an alternation of those
sensations already expressed on the nose, where the spicy trait prevails, which is expressed with a dry and very long finish
that takes you back to the past, to the ancient scents of the cellar.
The persistence of the notes is bold, the creaminess of the Chardonnay is an invitation to perceive the power of the Pinot Noir.
Bèlon du Bèlon Pas Dosé Riserva 1997 is the wine for an important evening, which tells its age in the softness on the palate: the pressure weakened by the passage of time at 4.5 atmospheres gives a delicate and very fine perlage that envelops the palate with grace.
A wine for "meditation" that can satisfy the most cultured and demanding spirits. Between complexity, softness and intensity it can be remembered on its own, even without accompanying food.
On occasion, it manages to enhance the most flavorful dishes to the fullest.

REFINEMENT
After fermenting on its own yeasts, the cuvée moves on to the bottle refinement phase with selected yeasts. After the tirage that takes place in late spring, the bottles rest on the yeasts in the cellar, at a controlled temperature for at least 23 years.
